Would I be correct in assuming that Matchbox's 1/72 Arado 234 kit has alternate parts to build the B2 and other versions? It seems to be the only available game in town for the "twin engine" version? (that DOESN'T cost an arm, a leg and a few bodily organs)

This I can help with. The Matchbox kit is the Revell kit which is the old FROG kit. It has both 2 and 4 engine versions. The V1 mounted on top and JATO pods under the wings and a huge bomb for under the fuselage. And iirc two choices of cockpit. Hopefully others will add more details for you.

I´ve got a Dragon kit with a V1 piggyback.

It does have two and four engines versions. It also (in my FROG example), has a V-1 for the top of the aircraft. Decent kit if I remember.
Hoping to return to modelling sometime this year!! :lol:
