A running rabbit would be problematic due to the delay between pulling the trigger, and the shot actually going off with a flintlock. A stationary one would be entirely possible though -- assuming the flintlock in question had a rifled barrel. Large scale adoption of rifles was still a few decades off, and as that process ran it's course, uniforms and tactics changed. The soldiers of the Napoleonic wars were, with some notable exceptions, equipped with smoothbores.
As usual, the movie industry just doesn't care about such details :roll:

Some last minute trickery that may be of interest:
The trumpet cord is made of two threads of different colours from my mothers sewing kit, twisted and then fixed together with a coat of Humbrol Clear.
The reins are made from paper, blackened with a felt tip. Once they were attached to the horse and rider, I soaked them with water to make them supple, and pushed them down a bit. Gravity and drying did the rest. Another one of those cases where you don't simulate, but effectively build the real thing at a much smaller scale, and with different materials.

I have the Airfix George Washington figure which I hope to convert into a a figure of King William of Orange.

Ambitious... none of the pictures of the English William of Orange I found look anything like Washington. I'll be keeping an eye on that one.
